THE PROJECT
The art of oil is born out of a project by Marco Mugelli, an agronomist specialized in oil press machines and techniques. After years of experiments and research, he decides to create a cooperative of firms geographically and qualitatively selected with the common aim of producing a top quality extra vergine olive oil.
The eight firms constituting the cooperative in fact belong all to the Florentine area, they have limited dimensions and a past paying attention to the local tradition. Nevertheless, the right outlook and a strong wish to evolve tradition in innovation is needed in order to lauch on a project uniting spirit with mutuality – deeply rooted in the rural culture of Tuscany –with the most refined tecniques, the result of field studies and laboratory researches.
The selection of the various firms has emerged in a quite natural way; the result is a mix of cultures, cultivars (basic varieties of plants)and people of different ages and experiences, but with a common aim: that of producing a real, healthy ‘oil juice’. |
